MIMM#10 and Food Remedies

I took Friday off and got my weekend started early. I got my hair done by Senekia in suite 33 at Salons by JC.  I was referred to this stylist by one of the parents at my school and I really enjoyed talking with her.  Senekia talked about her experiences as a vegan and raw foodie with a small child. Her child is a little older now and she allows her to make her own food choices, but her choices are relatively healthy.

 Marvelous was my 6:30am Saturday run and lunch was a Marvelous tomato, avocado, spinach, kale and dandelion greens sandwich on Genesis sprouted bread. Oh so Yummy.

After a trip to Crate & Barrel I had some Marvelous goodies.  My absolute favorite is the cherry/olive pitter. With cherry season in full swing I am lovin this gadget.

 During my hair appointment Friday Senekia shared with me some foods she uses for healing because she doesn’t like taking drugs.  Red lentils was one she told me she uses whenever she or her daughter aren’t feeling well. I had a chance to give it a try Sunday, I felt terrible with an upset stomach and weak from not being able to keep any food down.  She told me to simmer red lentils, bay leaf, thyme, green bell pepper, red onion, garlic powder and sea salt  until lentils are soft. I didn’t have the green peppers, I used red peppers instead.  This is a tasty dish and I felt better after having a small bowl and that was Marvelous.  Another food remedy Senekia shared was for removing excess mucus form the body by eating warm grapefruit sections.  I will be giving this one a try and I will let you know how it works.

WIAW #24 and Running After Work

Happy WIAW!  I hope your week is going well.

I started my day off Monday with a delicious green smoothie, I served it up in a nice big mug/bowl and added some Ezekiel 4:9 cereal and blackberries. It was thick, creamy and good!

Lunch was a big bowl of salad goodness.  Romaine, spinach, grape tomatoes, red onions, dried cranberries, raw almonds, crispy fried onions sprinkled on top and dressed in a light honey mustard dressing.  Yum, Yum!

For an afternoon snack I grabbed a mango from my desk fruit bowl.

I took my workout clothes to work with me and changed before my drive home. My thinking was that it would save me the time of changing once I got home and I would be more motivated to workout if I were already dressed for my workout.  It worked, I went for a 4 mile run, I struggled the first half mile or so, but once my body warmed up I was feeling good.  It’s amazing how running even after a long day at work can give you an energy boost. I felt so good after my run, but I think running in the early mornings is my favorite time to run, it gives me energy to face the day.  After my run I took leftover veggie pasta, mixed in meatless italian sausage sautéed with onions, tossed with alfredo sauce and sprinkled on some nutritional yeast for the smokey flavor.

After dinner I did some blog reading and had a very good nights rest.

MIMM # 9 A Marvelous Mother’s Day

Another MIMM hook-up at Healthy Diva Eats hosted by Katie, thank you Katie for being a wonderful host.  I had a Super Marvelous Mother’s Day weekend.  My cousin Rosa, who I hadn’t seen for a very, very long time was in town with her daughter and best friend Doris. Rosa is amazing, she hasn’t always eaten as healthy as she does now, she has lost an amazing amount of weight and is currently working on her PhD.   Pictured below Doris, Gina and Rosa.

We got together at my brother’s house for a  dinner of salads, veggie salad, pasta salad and I supplied the kale avocado salad and a blackberry, mango and strawberry fruit salad, my brother also gilled some chicken breast and asparagus. I loaded my plate with every thing except the chicken, because I don’t eat  meat. I am so sorry I forgot to take a picture of the food, but trust me it looked good and it was good.

Sunday was a Mother/Daughter day, I got in an early evening run and found some rather tasty eats at Whole Foods.  Why have I not had this before? I found the world’s best popcorn.  Whole Foods 365 Everyday Value Applewood Smoked White Cheddar popcorn. It’s light and airy and has no artificial preservatives or favors and the best part is that it’s only $1.99.

There were lots of tasting stations at Whole Foods this weekend, one that stood out for me was Nate’s Raw Harvest, they were very tasty and good for you raw pre-soaked organic nut and seed mixes.

I think that eating raw can be very beneficial to our health, (check out this prior post).  I am familiar with Ezekiel 4:9 bread, but this weekend I found the Ezekiel 4:9 sprouted cereal, I picked up a box of the Almond variety. I’ll let you know what I think.

WIAW #23 Clear the Fridge Meals

Happy WIAW!   This week I shopped my pantry and fridge before planning meals for the week, basically I planned my meals around what I already had and shopped only for what was really needed.

Breakfast was pretty simple.  A banana, Fage greek yogurt with oranges and cinnamon and coffee. By the way these are my meals from Monday.

Lunch was leftover Farro salad from Sunday.

My afternoon snack was an apple and Sunflower Seed Butter, (not pictured).

Dinner was Kale salad loaded with avocado, cherry tomatoes, edamame, dried cranberries, sliced almonds and hemp seeds dressed in honey mustard dressing.  Can you tell I like kale? If you have read some of my older blog post you know I eat it a lot, I think it might just be my favorite green veggie. It was a very tasty salad. I also made pita chips using leftover pita bread from last week, it was starting to get hard and I couldn’t think a better way to use it. (sprayed with olive oil before toasting in the oven).

Sometimes when I need a little inspiration I will type in the food item I have on hand into Pinterest search bar and see what happens.  It’s amazing how much comes up, try it!

MIMM #8 and Finding Farro

Happy MIMM!! I hope everyone had a Marvelous weekend, it was Marvelous around here.  I tried Farro for the first time, I found it at TJ’s and decided to give it a try.

Farro was very popular in the Middle East during biblical times, it grows well in poor soil and is naturally resistant to fungus.  It’s a cousin to wheat and it is similar in taste to spelt.  Farro is a whole wheat grain and is a great source of complex carbohydrates. It has twice the fiber and protein than the wheat most of us eat. The carbohydrate in Farro is called cyanogenic glucoside and is known to stimulate the immune system, lower cholesterol and help to maintain blood sugar levels. It contains gluten, however the gluten molecules are weaker, making it more easily digested. It’s also rich in antioxidants, phytonutrients, lignans and betaine.   Farro is a popular food in Italy, Europe, Asia and the Middle East, and has three grades, long,medium and cracked.  Farro can be purchased whole and cracked using a coffee grinder to assure freshness or you can purchase pre-cooked, all you have to do is boil for about ten minutes.

There is so much you can do with Farro, one of the first things that came to mind was a hot cereal.  I boiled the Farro for about 7 minutes with water, poured off the water added 1 1/2 tablespoon of thick coconut cream and 1 teaspoon cinnamon and boiled for an additional 3 to 4 minutes.  I sweetened it with agave nectar and topped it off with toasted coconut, dried cranberries, sliced almonds and I poured just a little more coconut cream on top.  It was so so Marvelous!

The second thing I made was a Marevlous salad. I used red onions, cherry tomatoes, chopped spinach, olive, italian seasonings, salt and cracked black pepper. Thought about using balsamic vinegar, but just wasn’t feeling it, but you can toss in whatever floats your boat.  I’ve got some sweet dishes in mind, I will share after testing the recipes.
